Kalamata Kiss
Description
Kalamata Kiss is firm, straw yellow, hand-crafted cheese produced in St. Mary’s Ontario from fresh unpasteurized cow milk, extra virgin olive oil, and select black Kalamata olives. The milk contains 100% of its original composition when used for the cheese making process. After forming into 2kg wheels, the cheese is vacuum-sealed before maturing in a cellar for three to five months, which enhances its characteristically smooth, creamy, Mediterranean flavour, and accentuates the natural tang of the olives.
With 40% moisture, Kalamata Kiss is beautifully firm in texture and looks great on a cheese platter with the dark aubergine colour of the olives providing a beautiful contract against the cheese. It melts very well which makes it a special treat for Raclette or grilled veggie sandwiches.
Best when paired with heavy red wines such as Cabernet Sauvignon or red Zinfandel.
