Made using Manchega sheep’s milk from La Mancha region of Spain (home to Don Quixote). Sharp, deep & nutty flavour. White creamy colour with a crumbly texture. The rind is inedible with a distinctive, traditional herringbone basket weave pattern. Pairs well with figs, red wine, sherry & cured meats.
