Farmstead Emmental

Description

First prize winner at both the 2018 Royal Winter Fair in the Variety Cheese – Firm and Hard Interior Ripened category, as well as the 2018 British Empire Cheese Competition, Farmstead Emmental is a pale yellow, hand-crafted alpine cheese produced in St. Mary’s Ontario from fresh unpasteurized cow milk.

This traditional cheese features the characteristic holes or “eyes” typical of Swiss cheese, which are formed during the aging process by gas bubbles released from the bacterial cultures that are used in making the cheese. Carefully following Swiss custom, our Farmstead Emmental is aged for three to five months, resulting in the interior paste having a mild aroma and a slight natural sweet nutty note that leaves a lingering creaminess on the palate.

Create the ultimate Reuben sandwich using Farmstead Emmental, Creel & Gambrel Montreal Smoked Meat, and Thousand Island dressing, or simply serve alone with Merlot, Riesling, or a Belgian style beer.
