Gorgonzola
Description
With an estimated date of origin set at 879 AD, Gorgonzola is one of the world’s oldest blue-veined cheeses and is produced in the northern Italian regions of Piedmont and Lombardy. Recognized by the European Economic Community, Gorgonzola cheese was registered in the list of PDO products on June 12th, 1996 ensuring its quality and authenticity. Resembling archaic porcelain, this intriguing cheese spares nothing in the way of decadence and flavour.
You’ll find our Gorgonzola soft and creamy, opening with nimble strokes of butter and slowly approaching a slightly acidic finish thanks to a maturing of at least 50 days. With its distinct look, Gorgonzola is versatile in its uses, adding zest to risottos, pastas, or pizzas.
The diffused green-blue veins stand out gracefully on a cheese board, pairing wonderfully with grapes, honey and pistachios, not to mention wines like Bordeaux Blend (Red), Zinfandel, and Sauternes.
