Scallops in Galician Sauce (Zamburinas)
These small tender scallops are a perennial favourite in Galicia in the northwest of Spain. These choice, tender scallops are harvested off the coast of Galicia, and lovingly preserved in a smoky, tangy Galician Sauce made from tomatoes, Pimenton de le Vera, onion, peppers, olive oil, and spices. Fished only during certain times of the year to maintain sustainability for future generations, the size of scallops vary resulting in different quantities in each tin.
Best served warm on crackers, or alongside olives, Marcona almonds, or potato chips. Pairs well with either a Cava or a cold Estrella lager.
