Handcrafted exclusively from raw water buffalo milk, this seasonally produced, unpressed, blue mold cheese is only available from December to July. Water buffalo milk has 50% more protein than cow’s milk, 40% more energy in calories, nearly 40% more calcium and high levels of the natural antioxidant tocopherol, but it also has twice as much fat – spread evenly across saturated, mono and polyunsaturated fats.
Hence the reason that Calabogie Blue is rich, creamy on the pallet, and mouth-wateringly tasty. It is a well balanced blue with a smooth bold finish, that can be enjoyed on its own or with other foods. Crumble over salads or melt over a juicy hamburger or steak.
Pair with either a Prosecco, a Moscato d’Asti or some dark chocolate.
