Farmstead Aged
Description
At 9 – 12 months old Farmstead Aged is a more mature farmstead cheese with a mild intensity and fruity/floral notes. Although a Gouda cheese, the taste of Farmstead Aged is reminiscent of a pleasant cheddar and has a semi-firm paste which is somewhat creamy in the centre and a little drier closer to the rind. Farmstead Aged was a winner at both the British Empire Cheese Competition and Finalist at the Canadian Cheese Grand Prix, and pairs well with white wines such as Chardonnay and Sauvignon Blanc.
