Description

This Royal Winter Fair award winner is named for the beautiful Lanark Highlands of eastern Ontario and the many Scots who settled in that area. Highland Blue is a tangy, rich, blue cheese made from 100% natural unpasteurized sheep’s milk. This decadent cheese is formed into tall, regal, and rustic wheels having a dense, semi-firm, antique-ivory coloured paste with prominent vertical teal-blue veining throughout, encapsulated in a mottled rind.

A tasting reveals full-flavoured overtones of butter and mushroom that are earthy and savoury with less salt and acidity than many blues.

Highland Blue pairs well with late harvest Rieslings, oatmeal stout, or ice cider.
