Madawaska is a gorgeous bloomy rind artisan sheep’s milk cheese named after the magnificent and rugged Madawaska river that wends its way through the scenic Ottawa Valley. This cheese features a thick, cream coloured surface flora, and interior paste that’s chalky white at the heart changing to flowing ivory closer to the rind. This sheep’s milk triple creme is a turophile’s delight, offering up full, sweet, tangy, milky, and mildly grassy flavours that linger bite after bite.

Delicate citric yogurt aromas culminate in a melting sweetness typical of sheep’s milk as the paste dissolves on your tongue.

Pair with either a sparkling wine, a Pinot Gris, or a wheat beer.
