Soppressata is an Italian classic that blends hand-trimmed, coarsely chopped, pork with savoury spices, and it is crafted and naturally aged in the Old World tradition. This product got its name from the centuries old practice of pressing the salami between planks of wood resulting in a straight flattened shape, however artisans from Vicenza in the Veneto region of northern Italy eventually did away with the pressed shape.
Ours is a sweet, firm Soppressata made in Ontario from imported Iberico pork infused with salt, pepper, garlic, and a medley of Mediterranean spices. This results in a mellow earthy taste with the nutty overtones of the pork being enhanced by the aging process.
