Description

Water Buffalo Slinzega is a type of air-dried whole muscle salumi, made in a similar manner to Bresaola exclusively from whole muscle eye of round sourced from an antibiotic/hormone free water buffalo herd in Saint-Charles-sur-Richelieu, QC. Although Slinzega looks like bresaola, it has a slightly stronger flavor, and is significantly lower in fat and cholesterol than pork, beef and chicken.

Our Water Buffalo Slinzega is flavoured with salt, cinnamon, cloves, black pepper, garlic, and thyme, before aging up to six months. Delicious when eaten in thin slices with no condiments; Water Buffalo Slinzega can also be served as an aperitif, with a touch of extra virgin olive oil and wheat bread.

It is excellent when accompanied by either a red or dark beer.
