Coloured Cheshire
Description
Cheshire is a dense and crumbly cheese produced in the English county of Cheshire, and four neighbouring counties, Denbighshire and Flintshire in Wales, and Shropshire and Staffordshire in England. This hard, cow’s milk cheese has a dense crumbly texture, and a mild, milky, but very slightly tangy flavour with subtle hints of fresh citrus.
Young Cheshire is naturally white in colour, however a touch of Annatto dye (prepared by stirring Annatto seeds in water), is added to the milk in order to formulate this Coloured Cheshire. Despite the difference in colour, the taste and texture of this cheese is the same as its white cousin.
Coloured Cheshire pairs well with Moscato d’Asti, or a variety of British Ales.
