Description
Made from thermalized cow’s milk produced exclusively from farms located on l’Isle-aux-Grues in the heart of the St. Lawrence River 45 minutes from Quebec City. This cheese with a flowery, ashy crust has a smooth semi-firm paste of pale yellow to straw yellow color depending on the season. On the nose, it has a pleasant smell of slightly tart fresh milk and undergrowth as it ages, while in the mouth it reveals a melting texture with a taste of butter and hazelnut.
A semi-firm cheese provoking in appearance like the legend of the unknown black horse crossing l’Isle-aux-Grues in terror and disappearing in the cold waters of the St. Lawrence River, Cheval noir de l’Isle has an ashy and flamboyant look; a sweet melting texture and a consensual taste perfectly tamed.
